Our Story: From Food Trucks to Frederick

In 2021, Lola’s Kitchen began its journey as a family-owned and operated business with roots deep in Mexican tradition and a love for bringing people together through food. Our adventure started on a 1986 Chevy step van, a true testament to resilience. Already converted into a food truck, this humble vehicle carried our dreams on its wheels, though it didn’t come without challenges. When the truck broke down, we rolled up our sleeves and fixed it, determined to keep our vision alive.

We started by serving our community in Erie, CO, offering a simple but mouthwatering menu of tacos, quesadillas, and the ever-popular smothered fries. As our loyal customer base grew, so did our ambitions. By 2022, we expanded with a second food truck—a bright yellow trailer—and our reach spread to Frederick, CO.

By 2024, it was time to plant permanent roots, and we opened our very first brick-and-mortar location in Frederick, CO. Here, we’ve expanded our menu to include not only our beloved tacos but also new favorites like tinga, our signature taco, birria, and carnitas. To wash it all down, we serve refreshing agua frescas like horchata and jamaica, alongside a selection of tequilas, including mezcal, reposado, and blanco for the true tequila lover.

Our restaurant is more than just a place to eat—it’s a community hub. We host lively tequila-tasting, trivia, and game nights in a fun, family-friendly atmosphere. Whether you’re here for happy hour with friends or a casual night with family, you’ll find our space upbeat, clean, and welcoming.
